Mokaflor roasters in Florence was taken over by the Bernini family in the 1930s and has been a traditional family business ever since. Florence is no longer imaginable without the two main brands, i.e. Caffè Mokaflor and Caffè Chiaroscuro and more and more they are catching on in Germany, too. Similar to the method used by many good roasters Mokaflor in Florence also roast all their varietals separately. Mokaflor use first-rate Arabica and Robusta coffees from Columbia, Brazil and Guatemala and roast their coffee slowly in the rotating drum according to the family recipe. This way each coffee contributes to an optimum result, one to the richness and harmony of aromatic ingredients, the other to balancing acidity, fruity overtones, body, volume or lasting fragrance and presence. After roasting and cooling the coffees are mixed into a perfect blend. This procedure is much more elaborate than with many conventional coffees; however, we gain much inspiration from having Mokaflor Miscela Rosso as a result.&lt;BR&gt;Mokaflor Caffè Rosso is composed of 60% high-grade coffees from origins in Central and South America and 40% creamy Robusta from India and Indonesia. This slow and gently roasting also makes for extracting to a large degree the bitter components, which render it very mild, smooth and gentle on your stomach. Blaser&rsquo;s roasters in Bern describe it as fine Deluxe blend. At first glance the broad spectrum of aromas can be described as fruity. Blasers Cote dAzur has particularly few irritants and is therefore also very digestible and gentle with your stomach.&lt;BR&gt;&lt;BR&gt;For their Cote dAzur Blasers coffee roasters use an excellent mix of washed varietals of highland coffees from Central and South America. In order to unite the optimum characteristics of the bean varietals into a perfect coffee each varietal is roasted slowly at constant temperatures and in small batches in the redating drum.
