Normally 6 to 8 different varietals are used, a) for achieving the richness and balancing acidity; one to two varietals for carrying the aroma and, above all the full-bodied coffees for flavour. All this marries individual beans into a perfect first-class blend. Slow and gentle hand-roasting in a rotating drum is another aspect for combining all aromatic components and almost completely extracting bitter acidity from the washed Arabica beans.
