These organic Pellini pads are pure poetry. For a long time the opinion was prevalent that all they got right was Pellini Top Class 100% Arabica. Now they have proved the opposite. As with Top Class only the best high-grown coffees from various origins, certified under EU directive 2092/91 as organic coffee, are used. As with all high-grade coffees the proper selection of Arabica varietals matters for Pellini Organic Espresso. For standard coffee only the most important and often most inexpensive coffees are used. For this one 6 to 8 different varietals are used, a) for achieving the richness and balancing acidity; one to two varietals for carrying the aroma and more contribute to an optimum flavour. All this marries individual beans into a perfect first-class blend. Slow and gentle hand-roasting in a rotating drum is another aspect for combining all aromatic components and almost completely extracting bitter acidity from the washed Arabica beans. A marvellous blends which can fully recommend.
